books + food: the irresistible blueberry bakeshop & cafe

Hi friends!

I recently finished a cute little love story and I think it’s a great “lay by the pool” + “soak up some sun” + “drink some iced coffee” kind of book.  It’s not award-winning and it’s totally predictable, but I just really enjoyed it! It’s called The Irresistible Blueberry Bakeshop & Cafe.

It also had a long list of DELICIOUS foods! It made me hungry and I was longing to travel out to Maine for all the goodness. I am currently in a book club that meets every few months or so and I always put together the food list for our meeting. Then we split up the list and enjoy the foods of the book while we discuss the story and our favorite characters.

Even though this wasn’t a book for the book club, the food was just too good not to list somewhere. So, I hope you enjoy the list and make the blueberry muffin recipe at the end.

three things i’m loving in june

Happy June! I wanted to share some of my favorite things with you.

  1. My S’ip by S’well thermos from Target. Bret saw it and knew I would like it. It’s yellow and has a bunch of little honey bees on it. Keeps my cold drinks cold and hot drinks hot for way longer than a normal water bottle.

  2. Summer board shorts I found on amazon. I always feel a little exposed in my bikini, but I’m really liking these swim shorts. They’re conservative, cute, and comfortable. I got a pair in coral and in aqua because they are super inexpensive. I recommend getting one size bigger than you normally wear in shorts.

  3. Chicken Soup from La Especial Norte. Recovering from surgery means lots of couch time, Gilmore Girls, good books, and soup. The BEST soup I’ve ever had is from La Especial Norte and it totally hit the spot.J fave 3

i love lists: indian summer remedies

Happy Saturday, friends!

It’s back with a vengance. This years’ indian summer has lasted longer then any that I remember. The 80, 90, and 100 degree weather has been consistent through October. So what can we do to beat it? I have a list for that.

palms

  1. Go to the beach! Dive in, lay out, read a book, repeat.
  2. Make popsicles! Shutterbean has a great list of fruity and boozy ones.
  3. Take a hike out at Torrey Pines. The ocean breeze is incredible.
  4. Drink iced tea. Lots and lots of iced tea. If you need a recipe, I have a refreshing mint one you could try!
  5. Find some big trees, lay down a blanket, read more books, and drift off.
  6. Don’t use your oven. Make salads, sliced cheese, fruit. Maybe get the grill going.
  7. Walk around the mall with your favorite iced coffee drink.
  8. Set your self up in front of the fan with your colored pencils and coloring book. They’re not just for kids anymore. Check out this one from papersource!
  9. Head down to your local pool for a night swim.
  10. Hawaiian shaved ice or frozen yogurt is always a good idea.
  11. Go see a movie and eat popcorn for dinner.
  12. It’s an excuse to take things slow and rest. So, do that – REST!

summer is my jam

TREES-723x1024IT is here. I look forward to it all year long. It makes me smile, my heart beats faster, and I am giddy with anticipation. Summer…my favorite season. Summer is my jam.

This summer I am excited for a quite a few things.

  • Beach Nights. Every Thursday evening we head down to the beach with our friends to surf, eat, talk, and watch the sunset. It’s the best. Beach Days with my Jr. High girls are going to be pretty rad too!
  • Using the Grill. Most of the year we are indoors and I’m doing the cooking (which I love). But, in the summer I take advantage of my husbands grilling skills (which he loves…I think). I am excited to make white fish with lemon, olive oil, tomatoes, shallots, and garlic. You just throw it all in a covered pan on the grill and when it’s all done you dip crusty bread in the amazing sauce.
  • Wearing Dresses. I wear dresses all year long, but it’s nice to have warmer weather and not worry if I am going to get cold. Plus I love the beach bum style and more of those options become available during summer.
  • Neighborhood Walks. Looking forward to the night that we take a walk after dinner and it’s still 75 degrees at 8pm. Holding hands with the man I love and praising the God we love. So dreamy.
  • San Onofre Beach Camping. Camping 20 feet from the water? Sure…I mean YES PLEASE. My favorite camping trip ever has been to San Onofre State Beach. You’re in and out of the water all day, the sun is warm, the drinks are cold, and you get to hear the waves as you drift off to sleep. Plus, it’s just a 5 minute drive to San Clemente for a walk around downtown. AND this year I hope to try paddle-boarding for the first time ever.
  • Freckles & Sunscreen. I love getting a tan, for me, equals I love getting more freckles. I always say I like to get a little burnt so I can get a base layer of freckles. Ha! However, that can only last so long. With my milky white complexion, sunscreen is my friend. It smells like a tropical island or a coconut and it reminds me of childhood.
  • Popsicles. Watermelon, berry, lime, pineapple…cold and refreshing. It’s happening.

Double time! Not much to report or post, but here are some of my random thoughts:

I am amazed at all the beautiful skies there has been lately. I’m also amazed that I can watch The Office a thousand times and never get sick of it. Summer has been lingering with this crazy heat, but I’m okay with that.  It just means I don’t have to bring a sweater with me everywhere I go. Caffeine has been giving me the jitters lately, but I really want to try Peet’s maple latte. Is it too soon for that? Anyway, enjoy these photos and I hope you have a great week ahead of you. mini lemon tea-cakes

This summer season calls for a little piece of lemon refreshment. These are they. And with a tart and slightly sweet glaze, you will have trouble eating just one. I suggest taking a seat outdoors, pouring yourself a generous amount of hot or iced tea, and enjoying a good book while you pop these in your mouth, one by one.

I owe the name of this dessert to my wonderful taste-testers (thanks, ladies!). This sweet treat was inspired by a cookie recipe, but they are definitely not a cookie. My taste-testers helped me determine that they’re not scones…they’re not muffin tops or biscuits…they’re not baked doughnut-holes…but they ARE mini tea-cakes! The outside is sweet and dainty while the inside is dense and perfectly chewy. Most importantly, the lemon flavor is explosive! If you love lemon, you will love these. Just don’t be surprised if your friends start calling them “Delicious Balls of Goodness.” Mine sure did. Things just got weird, I know.

First things first: making the dough. It will smell (and taste) perfectly lemony. This dough is then rolled into 24 small portions and baked until puffy!LTC 3

Next is the glaze: lemon, lavender sugar, and poppy seeds steal the show.LTC 4

Make sure you let those cookies cool down. Don’t they look tempting just sitting on that baking sheet all lemony and perfect? Yikes.LTC 7

Last we have the whole drizzling each cookie with a spoonful of glaze thing happening.LTC 8

Ingredients:

Mini Lemon Tea-Cakes

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/2 tsp. almond extract
  • juice of 1 large lemon
  • 1/2 cup ricotta cheese
  • 1/4 cup sour cream
  • zest of 1 large lemon
  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt

Lemon Lavender Poppy Seed Glaze

  • 1 cup powdered sugar
  • Zest and juice of 1 large lemon
  • 1 tsp. lavender vanilla sugar (I was gifted mine from Savory Spice Shop)
  • 2 tsp. poppy seeds

Directions:

  1. Preheat your oven to 350 degrees F and line two baking sheets with parchment paper.
  2. Cream together the but­ter and sugar in a mix­ing bowl with a wire whisk. Add the egg and mix well. Add the ricotta cheese, sour cream, almond extract, and the lemon juice and mix well. If using an electric mixer, you can switch to using the paddle attachment. If you’re a pro and going at it the old fashioned way, you can switch to using a wooden spoon.
  3. Combine the flour, baking powder, lemon zest and kosher salt in a separate bowl with a wire whisk. Add to the wet mixture until well combined. Do not over mix.
  4. Use a spoon to scoop out dough and roll between your hands to make into a ball shape. You should have enough for 24 small portions.
  5. Bake in the oven for 10-12 minutes. Switch the baking sheets on the racks half-way through the baking process. The tea-cakes will be golden brown on the bottom and puffy on top. Let cookies cool completely.
  6. While your mini tea-cakes are baking, mix all the ingredients for your glaze in a small bowl. Once the mini tea-cakes are cooled, drizzle each one with the glaze. Let the glaze harden for at least 30 minutes.
  7. Enjoy!!!
