Hello again!

I’ve missed this. It’s been a while since I have posted and I am looking forward to writing and sharing some things here! Finding time to keep up with blogging is difficult, but I recently had a surgery that has forced me to rest. So, silver lining, folks!

In March we enjoyed lots of celebrations:

March Collage

  • A beach birthday party for one of our favorite 12 year olds
  • Started two very different, but very good novels: Landline and The Nightingale
  • Went to dinner and a Jose Gonzales concert with one of our favorite couples ever
  • Celebrated 5 years of marriage with my sweet, handsome, enthusiastic, funny, strong, kind husband
  • Spent a weekend away in Las Vegas on the lake, enjoyed a Gordon Ramsey burger, and the best breakfast I’ve ever had at Bouchon Bakery
  • Bret treated me to some shopping and I ravaged the Anthropologie sale rack
  • Date day at VGs, Zumbar, SD Zoo, and El Indio
  • Celebrated EASTER SUNDAY at the Flower Fields in Carlsbad
  • Celebrated my husband turning 30 years old! Whoa…good thing he has the best baby face I’ve ever seen.

  • Spanish themed Cooking Club – I made olive tapenade toast and mushrooms sautéed in garlic and white wine
  • Spike ball Sunday
  • My mom came to visit from Idaho! We had a beach day, watercolor night, Community Group, and dinner together at Benihana (her first time hehe).

In May we enjoyed:

  • Mother’s Day dinner at my oldest and best girlfriend’s house
  • Book Club meeting for The Nightingale with the best french food spread ever
  • Said goodbye to the palm tree outside our front door…I loved that thing
  • 8th Grade Graduation party with our Jr. High kids – SO fun!
  • Lofty Coffee with Jocey
  • In home massages (late Christmas present for Bret)
  • Memorial Day appreciation and BBQ with friends

Something else that happened in March and is just now beginning to wrap up is an unexpected health update. My GP looked at my neck back in March and she thought my thyroid gland looked enlarged. She ordered an ultrasound which revealed that my thyroid was normal size but they could see there was a mass growing on the right side. I was then sent to a specialist. He did a biopsy and recommended I get it removed due to its large size. The biopsy came back a few weeks later as negative – PRAISE THE LORD! But I still had to consider surgery. I felt the most peace with moving forward with surgery and I am sure glad God directed me that way. Just this last week, they removed the mass and the Doctors laughed to each other when my husband asked how big it was. They said, “That thing was impressive!” So the mass is gone, it’s not cancerous, and I still have most of my thyroid intact. Recovery isn’t fun, but I am so grateful for God putting good doctors around me and for helping me to get healthy. I’m also so grateful for all the people who have prayed for me – God heard all of those prayers. And for those who have brought me flowers and food and cards and blessed me with your company. THANK YOU SO MUCH. My body is in pain but my heart is full.

i love lists : 10 fun dates

I love dates! Dating in the day, dating in the night, dating all day! Dates with Bret are something I really look forward to. To have specific time cut out just for us is so special and important.

I hope you enjoy these 10 tried and true fun date ideas!

  1. Picnic on the beach. Grab a big blanket, your favorite foods and drinks, and enjoy the waves and each other’s cute faces.
  2. Breakfast at your favorite place and a walk afterward. My favorite is Claire’s on Cedros.
  3. Movie night IN. You can switch off between guy movies and girl movies or do rock-paper-scissors. Variety is good and so is the cuddling on the couch during the movie part.
  4. Adventurous dinner date. Trying new things together makes for great memories and whether it’s Argentinian, Japanese, or French – try something different!
  5. Build a puzzle, drink good coffee, and indulge in your favorite dessert.
  6. Hike! I love hiking because there is so much good conversation and a common goal. My favorite hikes are in Torrey Pines and Idyllwild.
  7. Relive your first date ever. Whatever it was, it can be special and funny to do all over again.
  8. Go restaurant hopping. This makes the night really stretch out (which I love). Appetizers at one place, main dish at another, and drive-thru ice cream cone or froyo on the way home.
  9. Seasonal Activities: carnival, farmers market, surf competition, fair, classic cars, etc.
  10. Live music! Another good one, just takes a bit of planning. Or you can grab the local brewery schedule.

i love lists : concert night

I knew writing for 31 days straight would be a challenge! I keep trying to write my post the night before the day I should post…but it just doesn’t seem to happen.  Life is very FULL. That’s what we like to call it – FULL rather than busy.

Anyhow, I am attempting to write this post in 10 minutes or less because we are off to a Florence and The Machine concert tonight at SDSU. We are SO excited! We saw her 3 years ago and knew from that point on we will see Florence Welch every time she hits San Diego no matter what. Her voice is unreal and the show is magical.

This was us 3 years ago heading down to SD just like we will be doing tonight. We will have to take another car selfie as tradition. Things I’m excited for tonight:

  1. Spending hours and hours with the best guy in the world.
  2. Eating a yummy dinner…something fresh as I always like to say.
  3. Singing at the top of my lungs with the best guy in the world.
  4. Seeing all the hipsters all dressed up.
  5. Holding hands with the best guy in the world.
  6. Sitting in the stadium at SDSU will be cool! I’ve never been before.
  7. Laughing at the inevitable hilarious jokes told by the best guy in the world.
  8. Lisitening to Florence on the car ride home like we did 3 years ago.
  9. Kissing goodnight with the best guy in the world.
  10. Nodding off to sleep still seeing all the magic that Florence and The Machine created for us.

Welcome to the last two months! Holidays, birthdays, beach bashes, family, community, and work celebrations…big months! I will be posting again this week about some other news from August, but until then – Enjoy these little snapshots. This is our (VERY) full life.

our full life: week seventeen

This is week seventeen. One I will never forget. It started like any other…quite enjoyable, in fact. However, it ended with suffering. Suffering that I wish I could just hit rewind on. Suffering that causes me to lean on God deeply in desperation. I will share more on that at the end of the post.

katherine's day.jpgRemember the beginning of my post when I mentioned suffering? I would love if you took a few moments to read where our hearts have been lately.

This last weekend was heart breaking. Our pastors’ beautiful and kind hearted daughter (one of the students in our Jr. High group) was faced with life changing news. What was thought to be a sinus infection turned out to be much different. After a CAT scan on Friday, neuro doctors informed the family that their daughter has a mass at the bottom right side of her brain (middle cranium fossa) that would need to be removed. This news was absolutely crushing and came the day before Katherine’s 14th Birthday.

While there was still a lot of questions to be answered and things to pray for (the mass to disappear, the doctors to be strong and capable, the surgery to go smoothly, the mass to be removed and not cancerous, life preserved in good quality, God glorified, and more), Katherine’s amazing parents still wanted her birthday to be special. SO, we made that happen! Katherine had her 14th Birthday in the hospital with some of her closest girlfriends. We decorated a waiting room, ate pizza, spent time with her, sang Happy Birthday, and spent time praying for her. She was tired and we could feel the sadness weighing on everyone, but ultimately God was present and Katherine was so blessed by the time we all spent together.

This was something her dad emailed us about where Katherine was at mentally with this heart breaking circumstance: “Katherine loves to play soccer and surf. She has always looked up to Bethany Hamilton. We watched Soul Surfer again last night before the surgery. She told her mom yesterday that perhaps God can use this situation to bring Him glory like He did with Bethany. I told her that God is already doing that!” What a blessing.

It has been so comforting to know that thousands of God’s people from around the world are desperately praying for this beloved family. We have been praying constantly and our hearts long for relief. If you would like to pray for this family, please do! Katherine had her surgery today and things went very well and she was sustained by the Lord. The Doctors removed what they could of the tumor and are waiting for more results. Here are some of the prayer requests:

  • That the doctors got all of the tumor out
  • That the remaining pain in her face/head will go away permanently
  • Speedy recovery
  • No cancer found in the removed mass
  • No infections or complications
  • long and full life ahead for this beautiful girl

This has been a heartbreaking and discouraging time. Deeply felt grieving, weeping, and aching. Even still, my pastor and his family are giving thanks to God for his grace and provision. They continue to worship the God who is always present. They hope people will see His glory through this.

If you have faced suffering in your own life, I am truly sorry. Your suffering is not something I or anything in this world can fix. Please hear this message on God in the Midst of Suffering and see that there really truly is hope and rescue.

our full life: week sixteen

This was week sixteen of twenty-fourteen.

It was Holy Week on the Christian Calendar (the week leading up to Easter). During Holy Week we remember the most important week of the most important person who ever lived: Jesus Christ. Take a moment to reflect on this short quote:

“There was never any love like the dying love of Jesus. It is tender and sweet. It serves. It loves even unto death. Jesus had nothing to gain from us by loving us. There was nothing in us to draw us to him. But he loved us still, while we were yet sinners. At the Last Supper, in the garden, at his betrayal, facing the Jewish leaders, before Pontius Pilate, being scourged, carrying his cross, being nailed to the wood, breathing his dying breath, forsaken by God – he loved us.

I can’t believe January is almost over! This month has been one of growth, refocus, and preparation for the year to come. It’s also been nice to get back into the routine of everyday life. Here we go week four!

honeycrisp apple spice ice cream

HAS 1

Honeycrisp apples are my husband’s favorite apples. Ice cream is my favorite dessert. Honeycrisp apples IN ice cream had to happen sooner or later! It really helped that our local farmers market had a huge sale on honeycrisp apples…and let’s just say we went a little crazy.

Honeycrisp apples are known for their “sweet taste and distinct juciness” with an “explosive crunchiness.” My husband says, “It’s the perfect apple to hold in your hand and destroy with your mouth.” WOW! And because honeycrisp apples really are that good, they are what make this ice cream out of control.

For ice cream, I trust my friend Nicole. She really knows what she is talking about and she had the perfect recipe for me to go off of! Please enjoy this ice cream curled up on the couch with your favorite person and a good movie. Sounds like a great date night in to me!HAS 4

Ingredients for Honeycrisp Apples:

  • 2 large honeycrisp apples – peeled, cored, and cut into small chunks (2 cups)
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1 tsp. vanilla
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. ground ginger
  • 1 tsp. lemon zest
  • 1/8 tsp. salt

Ingredients for Ice Cream:

  • 2 cups whole milk
  • 1 tablespoon plus 1 tsp. cornstarch
  • 3 Tbsp. cream cheese, softened
  • 1 1/4 cups heavy cream
  • 1/2 cup garnulated sugar
  • 1 1/2 tablespoons agave
  • 1/2 tsp. vanilla
  • 1/8 tsp. kosher salt

Directions:

  1. Prepare and measure your ingredients for the spiced apples. Combine into a medium saucepan. Cook the apples over medium heat, stirring often, until the apples are tender (about 10 min.). Let the apples cool a bit and then place them in the fridge to chill.
  2. Meanwhile, in a large bowl, (I used my Kitchenaid mixer), whisk the cream cheese with whisk attachment, until smooth.
  3. In another large bowl, fill with cool water and ice. Set aside.
  4. In a small bowl, mix 2 Tbsp. of the milk with the cornstarch until smooth. Set aside.
  5. In a large saucepan, combine the remaining milk with the cream, granulated sugar, agave nectar, and vanilla. Bring the milk mixture to a boil and cook over moderate heat for 2-4 minutes until the sugar dissolves.
  6. Once the sugar is dissolved, remove the saucepan from the heat and slowly whisk in the cornstarch mixture. Return the saucepan to the heat and bring mixture to a boil. Reduce heat to medium high and cook unitl mixture is slightly thickened.
  7. Slowly whisk the hot milk mixture into the cream cheese until well incorporated and smooth. Whisk in the salt.
  8. Set the bowl in the large bowl of ice water and let stand, stirring occasionally, for about 20 minutes.
  9. Pour the ice cream mixture into an ice cream maker and freeze according to the manufacturer’s instructions. Add the chilled spiced honeycrisp apples during the last minute of churning.
  10. Pour into an airtight container and freeze for at least 3 hours before consuming. ENJOY!!!

HAS 6

This ice cream is rich and, at the same time, refreshing. I decided to drizzle some caramel sauce on top…good decision. Whipped cream or chopped walnuts would also be a perfect pairing.

our full life: week forty-five

OFL 45

I was looking forward to week forty-five for weeks! Week 45 meant date night in LA for a concert with my hubby and a weekend in Big Bear with our Community Group! However…as life goes, week forty-five actually meant Sarah is sick with a cold and not enjoying the concert as much and then stuck on the couch for a fews days missing Big Bear. It was a bummer, but I think it was exactly what I needed. I got to watch a few movies (like The Well Diggers Daughter…MUST WATCH AGAIN!) and spend quality time with Bret. It was nice to be forced to just rest up/get healthy again.

Either way, one thing is true: God is always good and I trust Him through each season: sickness, despair, stress, frustration, etc. He never changes and is always by my side. Here was week 45:

Tuesday meetingWork/lunch meeting at the local coffee shop.

our full life: week forty-one

OFL - 41

wine & bloggingI began the week with blogging and wine. I am ending week 41 in the same fashion.

rainy wednesdayWednesday was rainy and I loved watching it outside our office window.

powerlinesThese clouds were too beautiful not to take a shot outside my car window. I got some stares…worth it. I really liked the power lines in this picture too.

Lu & PapaMy beautiful niece and her papa. I love our family nights.

dresser loveThis was my dresser since I was a little girl. I found it while sorting through my dads garage. I was so grateful my parents let me do art projects and be creative when I was younger.

back to schoolWent back to school with Bret this weekend at Talbot. Seminary is a whole different ballpark of learning and it was an honor to be able to sit in on one of his classes.

date night inSunday date night IN! I made filet, mushroom risotto, and a green salad. We also opened a bottle of wine from Witch Creek Winery and indulged in some apples, canadian sharp cheddar, and goats milk brie.

I pray this next week is blessed and filled with hope, community, and service.
